Loretts O.G. Summary Data on the use of Hazed Analysis and Critical Control Point System for improving the quality of milk are presented in the article. This warning method is used in the food industry as a guarantee of produced food products. Particular attention is paid to hygiene characteristics of milk. Authors determined the number of somatic cells and bacterial contamination of milk by using different technologies of content and milking of cows. It is established that loose-technology of animal welfare with automated milking lines significantly (1.5-2.0 times) improves hygiene quality of raw milk.
