Summary. The purpose of the study was the study of the formation and growth of structures in the exocrine parenchyma of the pancreas in sheep. The pancreas of the sheep is covered by the connective tissue capsule at birth. The exocrine part of the gland consists of lobules of the 1st order, which continue to divide into lobules of the 2nd order till the age of 1 month. There is a thickening of the stroma, especially in the region of the ductal tree and big blood vessels at the age from 6 months to 3 years. Pancreatic acini in the exocrine gland are rounded or oval shape at the age of 1 month. In 3 years, they located tightly to each other, resulting in the displacement of the extracellular matrix. When mapping in the exocrine pancreas zymogen zones to homogeneous their ratio equal to 2:1 at 1 day of age, but by age 3 the ratio changes and becomes 1:1. In the analysis of morphometric parameters established in the first trimester of life of the animal area of the pancreatic acini by 25.17 % and by morphological and functional maturity of the body increases by 12.34 %. The number of exocrine pancreas from 1 day of age to 3 years by 39.76 % or 8.33±0.32 mm to 5.96±0.20, respectively. The area of the granule Imogene begins to change only at the end of the first trimester of life of the animal. So with the birth of this figure increases by 13.84 % and continues to gradually increase up to 3 years to 81.81 %. The nuclear-cytoplasmic relations exocrine pancreatic from birth to 3 months by 32.80 %. However, in 3 years, this figure increased by 17.65 %. Thus, the structural and physiological organization of the pancreas of sheep occurs throughout postnatal ontogeny. Comparing the data studied, we can conclude that in the exocrine part of the gland occurs consistent rhythm separate manifestations of activity of the acini as a whole as a system but composed of individual cells.
